What is Sake?

Sake is a traditional Japanese alcoholic drink made by fermenting rice. It’s often called rice wine, but technically it’s closer to beer or wine-making crossed together, because the starch in rice is converted into sugars before fermentation.

In Japan, sake is:

Château Laborde has been owned by Serge and Nathalie Audubert since 1996, with their son Vincent joining the estate in 2014. Aligoté represents approximately 6.5% of vineyard plantings in Burgundy and holds a long-standing place in the region as one of its two historic white varieties, alongside Chardonnay.

This expression from Domaine Vaudoisey-Creusefond is sourced from the climat Les Blanches, with vines averaging 40 years of age, the youngest planted in the 1970s. Aged for 12 months in tank, the wine displays a compelling balance between texture and vibrant acidity. Notes of lemon, almond, and delicate white flowers come together in a style that offers a fresh and distinctive interpretation of white Burgundy.

Situated at the gateway to the Hautes Côtes, Auxey-Duresses is a historic Burgundy appellation, officially recognised in 1937. With origins dating back to Gallo-Roman viticulture, the area is defined by diverse marl-limestone soils, shaped by a combination of well-exposed slopes and cooler valley sites.

Produced from Pinot Noir vines planted in 2000, this red wine displays a bright ruby colour and an aromatic profile of blackberry and peony. The palate is supple and finely textured, offering flesh and balance in its youth, while developing notes of leather and spice with age.

The cuttings were taken from an exceptional vine in Pomerol over 80 years of age, with the aim of preserving the authentic genetics and original characteristics of the Cabernet Franc variety.

The nose offers a subtle and complex expression, combining red fruit aromas with peppery spice, alongside delicate varietal notes of vegetal nuance and rose petal. On the palate, the wine is refined and elegant, with silky tannins and a well-judged balance of freshness and acidity. Floral and fruity flavours carry through to a composed, persistent finish.

Château Penin was founded in 1854 by Louis Carteyron and his son Jacques. The vineyards are located on gravelly soils on the left bank of the Dordogne, overlooking Saint-Émilion. Today, the estate spans 40 hectares and is managed by fifth-generation winemaker Patrick Carteyron, who assumed leadership of the domaine in 1982.

Description
This cuvée represents the estate’s first wine produced with virtually no added sulphur. Traditionally used in winemaking as an antioxidant and microbial stabiliser, sulphur has long played a role in preserving freshness and stability. In this case, Patrick Carteyron has succeeded in vinifying and bottling a Bordeaux Merlot without the addition of sulphur, relying instead on careful vineyard work and precise handling throughout the winemaking process.

Described by Patrick as a “naked” wine, Natur is intended to offer a more transparent expression of its origin, allowing the character of the soil, vines, and fruit to be revealed with greater clarity and immediacy.

Château Haut Mangaud, Côtes de Bourg (Organic) 2021 comes from one of France’s oldest wine-producing regions. This small, one-hectare estate was planted approximately 30 years ago and produces around 6,000 bottles annually. The wine is a blend of 90% Merlot and 10% Malbec. Following fermentation, it is aged for 10 months in tank, then further matured for an additional 10 months in oak casks.

Soft and ripe in style, the wine offers generous blackcurrant fruit and a rounded, supple texture. While the tannins reflect the character of the vintage, the focus remains firmly on ripe fruit expression and a warm, approachable profile.

Producer story
Vignobles Bourceau is a family-owned Bordeaux estate with origins dating back to 1835. Over six generations, the family has expanded from an initial two hectares to approximately 20 hectares across three châteaux, each located within a distinct appellation. Today, the estate is led by a father-and-son team, combining long-standing tradition with a thoughtful, modern approach to viticulture.

Committed to environmental responsibility, Vignobles Bourceau has progressively transitioned to organic farming practices since 2018. The estate avoids the use of chemical products, including pesticides, and works the soils mechanically using natural elements such as clay. This approach supports active microbial life, enriches soil health, and contributes to a reduction in sulphur dioxide usage across the wines.

Benefiting from a privileged vineyard location with a protective microclimate and exceptional soils, the estate is ideally suited to producing high-quality grapes. The wines reflect more than 180 years of dedication to craftsmanship, balance, and quality.

Situated in the lieu-dit Chevrol, the vineyards of Château Vieux Chevrol lie on the Néac plateau, overlooking the prestigious slopes of Pomerol; a terroir long regarded as among the most privileged of the appellation. This elevated position contributes to both finesse and natural balance in the wines.

The Champseix family has cultivated vines at Vieux Chevrol for generations, maintaining a deeply traditional approach to viticulture; one that would today be described as natural. Wine Traditions has had the privilege of working with two generations of the family: first with Jean-Pierre Champseix, whose profound understanding of, and reverence for, the land shaped the estate’s identity.

In 2016, his son Michel Champseix assumed stewardship of the vineyard and immediately initiated the transition toward formal organic certification, reinforcing the family’s long-standing commitment to respectful, sustainable winegrowing.

The nose is expressive and structured, displaying both depth and power. Aromas of cassis and wild berries are layered with notes of blackberry and cracked pepper, complemented by subtle floral hints of violet. Delicate nuances of sweet spice and cardamom emerge, alongside an almost imperceptible touch of blackcurrant bud.

On the palate, the wine is fruity, well-balanced, and finely taut, combining smooth texture with freshness and precision. The tannins are polished and beginning to mellow, providing elegance without sacrificing structure.

Decanting for approximately one hour is recommended to allow the wine to fully express its aromatic complexity and finesse.

Producer story
Already the owner of Château Penin in Génissac (Bordeaux Supérieur), Patrick Carteyron seized the opportunity in 2011 to acquire this confidential 2.5-hectare vineyard in pristine condition, located within the Saint-Émilion Grand Cru appellation.

The vineyard is planted with 35- to 70-year-old vines rooted in clay-sandy soils, a terroir well suited to producing wines of balance, depth, and aromatic complexity. Particular emphasis is placed on the conservation of old vines and the careful preservation of native grape varieties, reflecting a deliberate and respectful approach to viticulture.

The vineyard is planted to 80% Merlot and 20% Cabernet Franc, a classic Saint-Émilion blend that combines richness, structure, and finesse.

Les Collines du Bourdic was established in 1928 by a handful of vignerons from Bourdic and the surrounding villages, who produced authentic light, easy-drinking and fruit forward wines which reflect the heritage of the region. The skills and knowledge were passed down through the generations and in 1985, the cooperative rebranded as ‘Les Collines du Bourdic’. Today, it covers 1,700 hectares of vines, of which 150 are organic and certified HVE Level 3.

Food Pairing
To play with contrasts, serve Viognier with grilled and spicy foods, like a mild Japanese curry. Wonderful with blue cheeses too.

Clean robe with green tints. White flesh fruits pleasant nose: peach and winter pear. Refreshing wine, slightly tense, with a nice aromatic long finish, good structure and energy.

Grapes are harvested first thing in the morning then travel along the shady path bordered by 100-year-old plane trees, in order to be turned into wine in a natural cold room, thanks to the wine warehouse’s thick stone walls.

Growing on regularly worked silty-sand soil. Environment-friendly and organic fertilisation, helped by the best ally, the Mistral wind.

Producer story
Alpilles PGI is a recent Provence designation, that is still off the record with some 1075 acres, yet already well-known thanks to talented wine-growers. This is what motivated them to take over their family domain. Pebbles, ‘garrigue’, wind, sunshine: all the elements are here to produce good wines.

Description
With a complex, vinous and harmonious nose, we find in this wine a taste of fresh fruit, elegant, balanced and pleasant with a nice length.

The Müller-Thurgau, or Rivaner, is named after Professor Müller of Thurgau, Switzerland, who created it in 1882 by crossing Riesling and Gutedel, not, as previously assumed, Riesling and Silvaner. It yields about 30% more than Riesling and ripens earlier, usually in the latter part of September.

While it requires less sun and makes few demands of the climate, it does need more rain than Riesling, as well as soil with good drainage. Its wines are generally light, with a flowery bouquet and less acidity than Riesling. Müller-Thurgau often carries a hint of Muscat in its flavor.
Wines are best consumed while fresh and young. Dry versions are increasingly marketed under the synonym Rivaner.

Auxerrois blanc is thought to have originated in Lorraine, rather than near Auxerre in the Yonne. Recent DNA fingerprinting suggests that it is a cross between Gouais blanc and Pinot, the same ancestry as Chardonnay. The name Auxerrois blanc has actually been used as a synonym for Chardonnay in the Moselle region in France, which explains why there is also a longer name (Auxerrois Blanc de Laquenexy) for the grape variety.

Until the 18th and 19th centuries, the grape was a popular planting in Burgundy and Champagne, but poor yields and unreliable crops caused the grape to fall out of favor in those areas. Researchers at the University of California, Davis, have determined that Pinot Gris has a remarkably similar DNA profile to Pinot Noir and that the color difference is derived from a genetic mutation that occurred centuries ago. The leaves and the vines of both grapes are so similar that the coloration is the only aspect that differentiates the two.

Sangiovese is an Italian grape variety that Melina first vinified in Australia. Since 2004, Sangiovese vines have been planted in Thrace with excellent results. This richly flavoured wine displays aromas of spicy ripe plum, blackberry and violet. On the palate, black cherry fruit is supported by present yet elegant tannins, while a delicate oak influence carries through from the opening to a lingering, generous finish. The wine is aged for 12 months in French oak barrels, with one-third new, one-third two years old and one-third three years old. It has an ageing potential of 15–20 years.

A modern history of wine and art continues at Kikones. The name refers to an ancient Thracian tribe mentioned by Homer in both epic poems, believed to be among the earliest to engage in winemaking in the land of Thrace, in north-eastern continental Greece. Established in 2004, Kikones was the first winery founded in this historic region. Melina Tassou, agronomist and oenologist trained at the University of Bordeaux, applies extensive winemaking experience gained through formal studies and vintage work across France and Australia.

Producer
From racing car mechanic to winemaker, Borja Pérez has become a leading figure in the Canary Islands wine scene. After inheriting his family’s vineyard in 2011, he chose to vinify his own wines rather than sell the grapes. His focus shifted toward revitalising indigenous grape varieties such as Listán Blanco, Listán Negro, Marmajuelo, Vijariego Negro and Baboso Negro. This ongoing work includes restoring neglected, ungrafted vineyards as well as establishing new plantings.

The Artífice label reflects Pérez’s commitment to traditional viticulture. The body is fresh and well-balanced, with soft acidity and a creamy, persistent foam. It is a blend of 85% Glera, 13% Pinot Noir and 2% Merlot. The must is obtained through gentle pressing, followed by fermentation in stainless steel tanks. The wine is matured on its own yeasts at a controlled temperature. The sparkling process takes place in autoclave for approximately 40 days, before refining in bottle for a further 30 days.

Producer story
A love for their land and a desire to embrace ever-evolving technologies has accompanied the Sacchetto family for the past three generations. From the past to the present day, they have produced wines with passion and dedication. The Sacchetto family’s roots lie in the hills to the north-east of Conegliano, one of the finest production areas for Prosecco DOCG. The Spanish viceroyalty of Sicily began with Charles V’s ascension to the Spanish throne in 1516, a period believed to have encouraged the spread of Nerello Mascalese. Together with Niccolò Caracciolo, Bishop of Catania, Charles V transformed the Piana di Mascali into a Contea, placing church-owned land at the disposal of vine growers.

Medium to full-bodied, dry and fresh, with an engaging mineral character and well-balanced acidity. A very pleasant wine with a long, satisfying finish.

Producer
In 1946, Clemente Guasti founded the winery in the heart of Nizza Monferrato, beginning the production and sale of high-quality wines from the region. A gifted winemaker and innovator, his achievements began in the very first year of activity, notably through the introduction of grape origin on wine labels. This pioneering approach laid the foundation for the concept of “cru”, highlighting the importance of vineyard selection. He was also the first producer to bottle a 100% Barbera “cru”.

Description
An intriguing and complex Italian white produced from a rare native grape variety. Deep straw-yellow in colour, with a very complex nose showing intense fruit aromas of pear and peach, followed by floral notes of acacia, orange blossom and honey. Overall, it recalls a cross between the finest Sancerre and Riesling. Dry and complex on the palate, with pleasing freshness and remarkable persistence.

Producer story
Timorasso is an ancient Piemontese grape variety that was close to extinction in the 1980s before being carefully revived. Today, it has enjoyed a strong resurgence. The vineyards are located exclusively in the commune of Momberone. The wine is matured for six months in lightly toasted new French acacia barrels of 500 litres.

Food Pairing
Pairs very well with traditional Piemontese cuisine and is an excellent winter white, particularly with truffles.

Barbera d’Asti Temperanza, Guasti & Co 2023

Description
Ruby-red in colour, with an intense, vinous bouquet accented by floral notes. The palate is dry, medium-bodied, well-balanced and harmonious. Produced from 100% Barbera grapes grown in the Nizza Monferrato area. Vinification includes maceration on the skins for 7–9 days, followed by racking and slow fermentation over 2–3 weeks. After malolactic fermentation, the wine is kept in stainless steel tanks until bottling. No wood ageing is used. A brief refinement in bottle stabilises the wine before release.

Barbera, traditionally referred to in the feminine form (“la Barbera”), is the second most-planted red grape variety in Italy and one of the most representative varieties of Piedmont, covering approximately 35% of the region’s vineyard surface. It is known for its good yields, deep colour, low tannins and, unusually for a warm-climate red grape, naturally high acidity.

Description
Intense ruby-red in colour, with beautiful and complex aromas of fresh violet, elegant red roses, griotte cherry, ripe red raspberries and blackberries. Notes of vanilla and a light essence of tobacco follow, finishing with a delicate hint of oak. Elegant and medium to full-bodied, dry, smooth, warm and rounded, with vibrant acidity and low tannins. Well-balanced and very pleasant, with a long and persistent finish.

Producer story
This wine preserves the family’s secret winemaking traditions dating back to 1946. The vineyards of the estate, “Boschetto Vecchio”, are located in the Nizza Monferrato area at an altitude of 200–280 metres. Vinification includes maceration on the skins for 10–12 days, followed by racking and slow fermentation over 2–3 weeks. The wine is matured in 60-hectolitre oak casks for approximately 18 months, then aged in bottle for at least eight months before release.

Pairs well with substantial first courses, roasts, game and cheeses.

The aroma unfolds slowly, with soft notes of fresh cane and gentle citrus that feel immediately inviting. Lemon appears first, rounded and warm rather than sharp, before giving way to greener tones and a natural, earthy cane character. As it opens in the glass, subtle vegetal nuances and a touch of pepper emerge, adding depth and texture without disturbing the calm. Everything feels composed and settled, as if the spirit has nothing left to prove.

On the palate, the entry is smooth and reassuring. The rum is generous yet controlled, delivering a full, mature expression of cane with a natural sweetness that feels effortless rather than indulgent. Hints of lime and soft spice provide just enough lift to keep the experience focused, making it equally suited to slow contemplation or a quiet second pour.

The finish is long and enveloping, lingering with warmth and balance. It leaves a sense of completeness on the palate, the kind that encourages you to pause, sit back, and return to the glass at your own pace.

Chantal Comte Cuvée Caribaea Blanc 50° is an AOC Martinique white agricole rum, produced from pure sugarcane juice and distilled in a traditional Creole column at the La Mauny distillery. Carefully selected by Chantal Comte from the distillery’s vats, this cuvée captures a precise and expressive character, shaped by terroir and meticulous selection.

The label artwork was created by Cyril Girard, a naturalist illustrator and researcher whose work reflects a shared sensitivity to the richness and fragility of Caribbean ecosystems. This collaboration forms part of the Caribaea Initiative, an NGO supported through the release, with a portion of the proceeds from the 2,500 bottles produced donated to environmental conservation efforts.

What is Sake?

Sake is a traditional Japanese alcoholic drink made by fermenting rice. It’s often called rice wine, but technically it’s closer to beer or wine-making crossed together, because the starch in rice is converted into sugars before fermentation.

What it’s made from

  • Rice (polished to remove outer layers)

  • Kōji mold (Aspergillus oryzae), which converts rice starch into fermentable sugar
